Fresh produce also travels through harvest, transport, display and storage.
Pre-freezing treatment can change some water-soluble vitamins. Fresh produce also changes during storage. Neither format wins every time; results depend on the food, nutrient and conditions.
The study’s conclusion was not “frozen is always better,” but that the common belief in clearly superior fresh nutrition was not supported.

This was eight foods and three nutrients.
The study did not cover every vegetable, mineral, fiber or bioactive compound. Variety, origin, harvest, thawing and cooking can all matter.
Frozen products with sauces or added salt also need a different label check from plain frozen vegetables.
