Over two years, researchers analyzed broccoli, spinach, peas, blueberries, and four other foods in three conditions: fresh at purchase, fresh after five days of refrigeration, and commercially frozen. They measured vitamin C, trans-β-carotene, and total folate.

Both pre-freezing treatment and the time before fresh produce is eaten can change nutrients.
Blanching before freezing can reduce some water-soluble vitamins. Nutrients in fresh produce can also change during transport, store display, and home refrigeration. The study did not prove that frozen food is always better. It challenged the assumption that fresh food is always more nutritious.
A shopping decision
Choose for use and check the product—not only the word “fresh” or “frozen.”
The study covered eight foods and three nutrients. It cannot settle questions about every vegetable, mineral, fiber, or bioactive compound. Variety, harvest date, thawing, and cooking may change the amount of a nutrient present when the food is eaten.
If either format helps you eat the vegetables before they spoil, both are reasonable options. For frozen products with sauce or added salt, check the ingredient list and nutrition label separately from the question of freezing.
