Can food texture change how much we eat?

Fifty healthy adults ate four lunches that differed in texture and degree of processing, stopping when they felt satisfied.

Researchers prepared soft and hard meals in both minimally processed and ultra-processed forms. Because every participant completed all four conditions, the study could examine how processing, ease of chewing and eating rate related to intake.

Participants consumed 26% less energy from the hard meals than from the soft meals, on average.

Hard meals were eaten more slowly and led to 21% less food by weight and 26% less energy consumed.

Before someone consciously decides to slow down, hardness and bite size can already shape pace. Video coding showed that participants ate the harder meals more slowly. Texture can influence a meal without feeling like a rule imposed on the person eating it.

The study does not show that hard food is always healthier or that the lunches caused long-term weight change.

Participants averaged 24.4 years of age and all had a healthy weight. Researchers measured four laboratory lunches. Energy density varied slightly between meals, so the 306 kcal gap between the lowest and highest conditions cannot be attributed to texture alone. Making food harder is also inappropriate for anyone who has difficulty chewing or swallowing.

Alongside quantity, note one texture cue: “needed more chewing,” “soft,” or “easy to swallow.”

A short note can preserve texture that a photo cannot show.

A photo can suggest likely dishes, but it cannot reliably tell you how chewy or creamy a meal felt. A few words such as “firm” or “very soft” can bring that context back later.

The photo timeline then helps you compare days when the dish name looked similar but the eating experience differed.
