Researchers asked every participant to complete two isocaloric meal conditions on separate days. In one condition, participants ate vegetables and protein before carbohydrates. In the other, they ate the same foods as a standard mixed meal. Researchers measured glucose and insulin before the meal and at 30, 60, and 120 minutes afterward.
Two-hour glucose response in 18 adults
The vegetables-and-protein-first condition reduced the glucose response by 40.9%.
What another small trial measured
The 16-person PATTERN trial also compared glucose responses after different food sequences.
Sixteen healthy Chinese adults ate five versions of a meal containing vegetables, chicken breast, and white rice. Compared with eating rice first, several conditions that placed vegetables or meat before rice produced a lower overall post-meal glucose response. Researchers also measured insulin and gut hormones during the three hours after the meal.
Limits of small single-meal trials
A lower glucose response over a few hours does not establish a long-term health benefit.
These trials studied acute responses to one controlled meal in small groups of healthy adults. They did not measure long-term weight change or disease prevention. The results are also not a reason to alter diabetes medication or treatment without clinical advice.
If your meal contains vegetables, a main dish, and a carbohydrate-rich staple, try placing the staple last once. Keep the foods and total amount the same, and notice whether the sequence is practical. If it makes the meal awkward, the short-term laboratory result does not require you to continue.
