Two tastes changed under noise
Loud sound reduced rated sweetness and increased rated umami intensity.
Three tastes did not clearly change
Noise did not dull every basic taste in the same way.
Researchers found no clear difference in salty, sour or bitter intensity. Participants also performed similarly on tactile, visual, auditory and reaction-time tasks during noise. A general loss of concentration does not fully explain the pattern.
This was not a restaurant meal
The experiment does not show that a noisy restaurant makes people order more sweet food.
Participants tasted liquids that isolated the five basic tastes. Real dishes combine aroma, temperature and texture, so they may behave differently. The study measured perceived intensity and did not measure orders or food intake.
