NIH researchers housed 20 adults at a research facility for 28 days. Each participant ate an ultra-processed diet and an unprocessed diet for two weeks, in randomized order, and could eat as much as desired. The researchers matched the menus presented for calories, macronutrients, sugar, sodium, and fiber.
What changed in the trial
On the ultra-processed diet, intake averaged 508 kcal more per day.

What differed between the diet periods
Participants consumed more energy from carbohydrate and fat during the ultra-processed phase.
During the ultra-processed phase, participants consumed an additional 280 kcal per day from carbohydrate and 230 kcal per day from fat. Energy from protein did not differ significantly. Participants also ate faster.
The diets differed in texture, eating rate, energy density, and beverage share as well as processing classification. The trial did not separate these features well enough to name one as the sole cause.
What you can observe at home
Before banning a category, record eating rate, meal combinations, and satisfaction for one week.
Frozen meals, bread, cereal, and shelf-stable products can save time, fit a budget, and reduce storage problems. The term “ultra-processed” does not describe every product’s nutrient profile or role in a person’s routine.
For one week, record when you ate a convenient food, roughly how long the meal took, what else was on the plate, and how satisfied you felt afterward. If one fast-eating combination repeats, change one element—such as adding soup, adding a side, or serving the food on a plate—while keeping the convenience.
Use the study this way
Record “how fast did I eat?” and “what did I eat with it?” alongside the processing category.
Those questions turn a broad label into aspects of a meal that you can actually compare and change.
